Sumit is the managing director of Paschion Restaurants. A third generation restaurateur, he graduated from Les Roches with an Honours Degree in Business Administration with specialization in Hospitality Marketing.
After gaining professional experience at Hotel Mövenpick Lausanne, The Four Seasons London and Hyatt Regency Denver at Colorado Convention Center, he returned to Delhi and worked for a year at his family restaurant, Gulati's at Pandara Road to acquire local knowhow.
Sumit holds a Level 2 Qualification from WSET, a globally recognized organization educating professionals in Wine & Spirit. His proficiency in wine led Spice Market to be awarded as the 'Indian Restaurant with the Best Wine List' in Delhi-NCR by the Delhi Wine Club, twice in 2016 and 2019.
Sumit also manages Front of House operations, F&B Audits, Purchase and Financial Administration of the company. He has been personally overseeing the restaurant and cloud kitchen's CRM and digital marketing campaigns. His expertise in Revenue Management, Cost Control and Overall Business Management has helped Spice Market go from strength to strength over the last 12 years despite several adversities in Indian business environment.
He has modelled his expertise in menu engineering and yield management in coming up with five new cloud kitchen brands that run on extremely low fixed costs harnessing the preexisting skill set and expertise of Spice Market. Two of these brands have already become extremely popular, namely, Yours Truly Butter Chicken and Call Chotu with close to 40,000 orders delivered in the last 12 months.
Along with Chiquita, he has also been running a management consultancy firm since 2009, undertaking turnkey restaurant projects such as Lotus Leaf in Rohini and Paparizza on Hudson lane, advising restaurants on optimizing profitability and training chefs in recipe & inventory management systems such as 'Calcmenu'.
