Interested in serving people with mouth watering and delicious foods, Sneha Singhi was born in Kolkata from where she did her schooling. For further studies, she moved to Bengaluru and later to Paris for pursuing her Diploma in patisserie. Her mother being the only inspiration and motivation which made her cook and serve like the way she does.  Excerpts from the interview:

What made you enter into the food business?

My mother has always been the answer to this question. She is a great cook and an inspiration as well as a motivation for me. She has been cooking since I was a child and can make the best food out of anything and everything. I have always been trying to be like her in every possible way. That is exactly what motivated me to enter into the food industry.

Why Paris Café ?

I wanted a name which can be remembered and pronounced clearly and perfectly. And as I had studied in Paris, an idea came in my mind and we end up naming it Paris Cafe. I wanted to bring an international taste and ambience nationally.

The décor gives a feeling of a luxurious and royal ambience. How do you create this?

The mastermind behind the décor and interior of my café is my mother. The whole idea came from her mind decorating all my cafes on her own. When I was in Paris, she was there with me for a couple of months. So, whenever we used to go out to a place, the open air and royal ambience was something which always amazed us. I just wanted a feel of Paris at my café and my mother just kept that in mind and decorated it in a way that you will end up having a taste of Paris in every way.

What’s your take on the growth of café market?

I think that it’s growing really rapidly. People these days are getting into the food business either for making money or for pursuing their passion as this industry is growing each and every day. This is like an absolute future where people will treat and get to be treated with foods and beverages. I personally feel blessed to be a part of this industry.

From where do you get the supply of raw materials?  

Mostly we try to get whatever we can source locally. But stuffs like chocolates and flowers are imported from big industries of Belgium which are transported to Mumbai before we receive it. Other than that few chocolates and other stuffs are directly imported from France.

What’s so unique about your café?

The deserts that we offer can’t be found anywhere else in Kolkata. Also the quality and the standard is something which makes us stand odd as compared to other cafes located here. We supply only to a niche crowd of our city. People generally swear by us that the quality of the deserts is something which can’t be found somewhere else.

Any expansion plans?  

 Yes absolutely. I already have five outlets of Paris Café located in Kolkata. Now, I am planning to move towards another city. Bengaluru is my first choice followed by Delhi, Mumbai and so on.
